Polynesian Catfish Recipe

Catfish-2 pounds, skinned and filleted
Soy sauce-1/4 cup
All-purpose flour-1/2 cup
Cornstarch-1/2 cup
Baking powder-1 tablespoon
Salt-1 teaspoon
Pepper-1/4 teaspoon
Water-1 cup
Egg-1, beaten
Fat- for frying
Pineapple sauce-for serving
Directions
GETTING READY
1)Cut fish into 2 x 1-inch strips.
MAKING
2)Take a shallow pan and put the fish into it.
3)Drizzle soy sauce and leave it for 30 minutes. Turn once.
4)In a bowl, mix flour, cornstarch, baking powder, salt and pepper together.
5)In another bowl, mix water and egg and mix the tow mixtures.
6)Dip fish strips into batter.
7)In a pan, heat fat and deep fry for 5-6 minutes or until browned. Drain.
SERVING
8)In a serving dish pour some pineapple sauce and place the fish in it. Serve with rice.
