Ingredients

 1 cup uncooked regular rice
 Mushrooms1/4 pound
 Vegetable oil1/2 Cup (16 tbs)
 Cider vinegar1/4 Cup (16 tbs)
 Soy sauce2 Tablespoon
 Salt1/2 Teaspoon
 1 can (11 ounces) mandarin-orange segments, drained
 Celery1 Cup (16 tbs), thinly sliced
 Water chestnuts1 Can (10oz), drained
 Green onions2 Tablespoon, thinly sliced
 Iceberg lettuce

Directions

MAKING
1. Cook rice according to instructions and add it to a large bowl
2. Trim mushrooms, wash and pat dry and slice lengthwise; add to te rice
3. In a jar, mix vegetables oil, Vinegar, soy sauce and salt , close the lid tightly, shake well and add to the rice mixture
4. Toss it around lightly, cover adn chill for at least an hour so that the flavours blend in

SERVING
5. Fold segments of mandarin oranges, celery, water chestnuts and green onions, dd to a lettuce bowl and serve
