Polynesian Chicken Recipe
Ingredients
| Chicken breasts | 6 | |
| Chicken legs and thighs - 6 | ||
| Fruits - 3 cans, liquid reserved | ||
| Soy sauce | 1 Bottle (1l) | |
| Garlic | 1 Clove (5gm), crushed | |
| Sweet and sour sauce - 3 jars | ||
Directions
MAKING
1. In a shallow roasting pan, place the chicken skin side up and pour syrup from the fruit as well as soy sauce and garlic over it
2. Bake it for an hour at 350°F, basting every now and then; pour the liquid from the chicken into a saucepan and combine it with sweet and sour sauce
3. Boil the sauce until it begins to thicken and reduces to about three and a half cups in volume, say forty minutes in all
4. Pour this sauce over the chicken, cover with foil and refrigerate overnight; bake the chicken the next day for half an hour without the lid and basting as often as possible
5. Add drained fruit to it and bake for another half an hour

6. Serve as appropriate
