1 Chicken (3.5-4.5 lbs) Spatchcoked (backbone removed, and opened like a book)
rosemary sprig
1-2 Tbs olive oil
Directions
Heat a very large cast iron skillet over high heat
also heat a smaller cast iron skillet over high heat
sprinkle salt over bottom of large skillet
pound chicken thin
add 1 Tbs olive oil to large skllet and place chicken, skin side down in
skatter rosemary over and season with salt and pepper
pour 1 tsp olive oil over chicken, and season with salt and pepper
cover with smaller skillet and place a 10 lb plate in skillet to weigh down on top of chicken
Cook for ~40 minutes, turning the chicken over every 10 minutes.
The chicken will be very crisp and very juicy.
