Pollo Empanizado Recipe
Ingredients
| 1/2 cup WISH-BONE Italian or Robusto Italian Dressing | ||
| Lime juice | 2 Tablespoon | |
| 1/2 teaspoon grated lime peel | ||
| 4 boneless, skinless chicken breast halves (about 1 pound), pounded 1/4 inch thick | ||
| Yellow cornmeal | 1/2 Cup (16 tbs) | |
| 1/2 teaspoon LAWRY'S Garlic Powder with Parsley | ||
| Salt | 1/4 Teaspoon | |
| Red onion | 1 Medium, chopped | |
| Chopped fresh coriander (cilantro) or parsley | ||
Directions
In large, shallow baking dish, blend Italian dressing, lime juice and peel.
Add chicken and turn to coat.
Cover and marinate in refrigerator, turning occasionally, at least 2 hours.
Meanwhile, in medium bowl, combine cornmeal, garlic powder and salt.
Remove chicken, reserving marinade.
Dip chicken in cornmeal mixture, coating well.
On aluminum foil-lined broiler rack or in greased shallow baking pan, arrange onion around chicken.
Drizzle chicken and onion with reserved marinade.
Broil, 7 minutes or until chicken is done.
Sprinkle with coriander and serve with freshly ground black pepper, if desired.
