Polka Dot Cookie Recipe
Ingredients
| All purpose flour | 2 1/4 Cup (16 tbs) | |
| Baking soda | 3/4 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Butter/Margarine | 1 Cup (16 tbs) | |
| Firmly packed brown sugar | 1 Cup (16 tbs) | |
| Granulated Sugar | 1/2 Cup (16 tbs) | |
| Eggs | 2 | |
| Vanilla | 1 1/2 Teaspoon | |
| Butterscotch package | 1 , flavored | |
| 1 cup tiny marshmallows | ||
Directions
1. Measure flour, soda and salt into sifter.
2. Beat butter or margarine with, brown and granulated sugars until fluffy in large bowl with electric mixer at high speed; beat in eggs and vanilla. Sift in flour mixture, a third at a time, blending well; stir in butterscotch pieces.
3. Drop dough, a scant 1/4 cupful at a time, 6 inches apart, on large cookie sheets; spread into 4-inch rounds.
4. Bake in moderate oven (375°) 10 minutes; place several marshmallows on top of each cookie. Bake 2 minutes longer, or just until marshmallows melt. Remove to wire racks with spatula to cool.
