Polka Dot Meat Cups Recipe
Ingredients
1 1/2 cups frozen loose-pack hash brown potatoes
1 beaten egg
3/4 cup tomato sauce
3/4 cup soft bread crumbs (1 slice)
1 tablespoon Italian Seasoning Mix
3/4 teaspoon salt
Dash pepper
1 pound ground beef
Directions
Preheat oven to 375°.
Meanwhile, spread potatoes on paper toweling; let stand 5 minutes.
In large bowl combine egg, 1/4 cup of the tomato sauce, bread crumbs, Italian Seasoning, salt, and pepper.
Add ground beef; mix well.
Fold in hash brown potatoes.
Divide into 8 portions; shape into balls.
Place one in each of eight 2 1/2-inch muffin pans.
Bake in 375° oven for 20 minutes.
Top each with some of the remaining tomato sauce.
Bake 5 to 10 minutes more.
