Polish Sausage And Chick Pea Casserole Recipe
Polish sausage and chick pea casserole is a filling and delicious bake. Prepared with vegetables and chickpeas, the casserole is cooked with chopped sausage pieces. Herbed with oregano and flavored with fennel seeds, this polish sausage casserole makes a lovely meal.
Ingredients
1 1/4 cups cooked and drained chick peas
1 cup drained canned low sodium tomatoes, chopped
1 medium size yellow onion, chopped
1 medium size sweet green pepper, cored, seeded, and chopped
2 ounces precooked Polish sausage, chopped
1 bay leaf
1/4 teaspoon dried oregano, crumbled
1/4 teaspoon crushed fennel seeds
Directions
Preheat the oven to 400°F.
In an ungreased 8"x 8"x 2" baking dish, mix the chick peas, tomatoes, onion, green pepper, sausage, bay leaf, oregano, and, if you like, the fennel seeds.
Cover tightly with aluminum foil and bake for 15 minutes.
Uncover and bake 5 minutes longer or until the mixture is hot.
Discard the bay leaf.
