Polio alia Cacciatore (Chicken Hunter Style) Recipe
Ingredients
| Frying chicken | 4 Pound | |
| Flour | 1⁄2 Cup (8 tbs) | |
| Salt | 1 Teaspoon | |
| Butter/Margarine | 3 Tablespoon | |
| Oil | 3 Tablespoon | |
| Chicken broth | 1 Cup (16 tbs) | |
| Coarsely chopped peeled tomatoes/1 cup canned tomatoes | 1 Cup (16 tbs) | |
| Whole onions | 6 Small | |
| Pimento | 1 | |
| Garlic | 1 Clove (5 gm) | |
| Salt | To Taste | |
| Pepper | To Taste | |
| Mushrooms | 1 Cup (16 tbs) | |
| Chopped parsley | 1 Tablespoon |
Directions
Roll chicken pieces in a mixture of flour and salt.
Brown on all sides in hot butter or margarine and oil in large skillet.
Add remaining ingredients, except mushrooms and parsley.
Cover, and simmer slowly 1 hour.
Add mushrooms and, if more moisture is needed, extra chicken broth or a little dry white wine.
Cover, and cook 15 minutes longer or until chicken is very tender.
Garnish with parsley.
