 4 1/2 cups water or chicken stock
 1 cup coarse cornmeal
 Salt1 Teaspoon
 1/4 cup chopped fresh herbs, such as parsley, basil, or rosemary
 A- cup finely grated Parmesan cheese, finely grated

Directions

1. Place the water or chicken stock in a medium-sized saucepan over high heat and bring it to a boil. Gradually add the cornmeal and salt.
2. Reduce heat to medium low and cook for about 40 minutes, or until the cornmeal becomes quite thick. If desired, add the herbs and cheese.
