Pol Sambol Recipe
Ingredients
250 gm fresh coconut
1 tsp chilli powder
2 tsp paprika
8 shallots, chopped
1/2 tsp salt
Juice of 1 lime
Directions
In a mortar and pestle, pound shallots, chilli powder, paprika and salt into fine pieces.
Add the pounded mixture to the coconut, moisten with lime juice.
Blend the mixture well with hands.
Season with salt, if necessary.
Serve as an accompaniment to rice and curries.
