Poached Trout With Clam Dressing Recipe

Ingredients
2 tbsp (30 mL) vegetable oil
1 to 3 lb (500 g to 1.5 kg) fresh trout, whole or filleted
1 tsp (5 mL) salt
1 tbsp (15 mL) each parsley and sage
Juice of 1 lemon
1 5-oz (142 g) can baby clams
1/4 tsp (1 mL) thyme
12 stuffed olives, sliced to garnish
Directions
Pour the oil into an 8 x 12-inch (20 x 30 cm) glass or ceramic dish and, without overlapping the pieces, place the whole or filleted fish in the dish.
Sprinkle with salt, parsley and sage.
Sprinkle lemon juice over all.
Drain the clams and pour the juice over the fish.
Sprinkle with the thyme.
Cover dish with cover or waxed paper and microwave at MEDIUM-HIGH 6 to 12 minutes, depending on whether you have thin fillets or whole fish.
Cool, then drain the juice carefully without disturbing the fish.
Refrigerate the fish and the broth separately.
When ready to serve, mix together the reserved clams and sliced olives.
Add just enough broth to make a light sauce and pour over the fish.
