Poached Salmon Recipe

Ingredients
8 cups (2 L) water and juice of 1 lemon
2 carrots, peeled and sliced
12 peppercorns
1 tbsp (15 mL) coarse salt
6 to 10 parsley sprigs or
1 tbsp (15 mL) dried parsley
1 bay leaf
3 to 4 lb (1.5 to 2 kg) fresh salmon in one piece
Directions
Choose a dish large enough to hold the salmon.
Place all the ingredients in the dish except the salmon.
Cover and microwave at HIGH 15 minutes.
Wrap the salmon in a wet J-cloth, sew up in a neat bundle and place in the boiling water.
Cover fish with water.
Cover dish and microwave at MEDIUM-HIGH, 5 minutes per pound (500 g).
Let stand 10 minutes.
Remove fish from water with two forks.
Set on a plate.
To serve hot, unwrap and set on a dish.
Top with finely chopped fresh parsley or dill and melted butter or use a sauce of your choice.
To serve cold, do not unwrap; refrigerate 6 to 12 hours.
Remove cloth and garnish to taste.
Serve with a bowl of cold sauce of your choice.
