Poached Salmon Recipe
Ingredients
| Water | 2 Cup (16 tbs) | |
| White wine | 2 Cup (16 tbs) | |
| Peppercorns | 4 | |
| Parsley stems | 4 | |
| Celery stalks | 2 | |
| Carrot | 1 | |
| Onion | 1 , sliced | |
| 4-5- pound piece of salmon | ||
| 1 recipe Herbed Mayonnaise | ||
Directions
Combine all ingredients except salmon and mayonnaise.
Simmer 15 minutes.
Wrap fish in cheesecloth, and lower gently into simmering liquid.
Cook 7â€â€8 minutes per pound; test for doneness with toothpick, if not cooked, return to broth a short time.
Let cool in liquid, and remove with aid of cheesecloth.
Chill thoroughly.
Serve with Herbed Mayonnaise.
