Poached Perch With Chervil Recipe

|Shallots||2 , thinly sliced|
|Carrot||1 , cut into julienne pieces|
|Turnip||1 , cut into julienne pieces|
|Snipped fresh chervil||1 Tablespoon|
|Dry white wine||1⁄4 Cup (4 tbs)|
|Freshly ground pepper||1⁄2 Teaspoon|

In a heavy skillet, heat butter over medium heat until foamy.
Add shallots, carrot, turnip, and chervil; stir well.
Add wine and simmer, partially covered, for 10 minutes.
Slide in perch.
Add at least 1/2 teaspoon pepper, bring to a gentle boil, then reduce to a simmer.
Poach perch until opaque, 10 to 15 minutes depending on thickness.
