Poached Pears With Yogurt Sauce Recipe
Ingredients
4 firm, ripe pears
6 tablespoons honey
2 teaspoons lemon juice
dash ground ginger
dash ground cloves
11/2 cups unsweetened apple juice topping
1/2 teaspoon almond extract
1 tablespoon honey
1/2 cup yogurt cheese
fresh mint leaves for garnish (optional)
Directions
1. Core whole, unpeeled pears.
2. In a broad saucepan with tight-fitting lid, combine honey, lemon juice, ginger, cloves, and apple juice.
3. Bring to boil over medium heat.
4. Place pears upright in boiling liquid.
5. Cover, lower heat and simmer for 30-45 minutes, until pears are tender.
6. Remove pears carefully and transfer to serving dish.
7. Spoon 1-2 tablespoons cooking syrup over each pear.
Topping:
1. Beat almond extract and 1 tablespoon honey into yogurt cheese.
2. Serve pears hot or cold, with a dollop of topping.
3. Garnish each pear with fresh mint leaves at serving time.
