Poached Pears With Raspberry Sauce Recipe

4 small pears Lemon juice
4 cups water
2 cups sugar
1 teaspoon grated lemon rind Juice Of 1/2 lemon
1 (3-inch) stick cinnamon

Directions
Peel pears, removing core from bottom end, leaving stems intact.
Brush with lemon juice to prevent browning.
Combine next 6 ingredients in a Dutch oven; bring to a boil over medium heat, stirring constantly, until sugar dissolves.
Place pears in Dutch oven in an upright position.
Cover, reduce heat, and simmer 20 to 25 minutes.
Let the pears cool in poaching syrup; chill, spooning the syrup over pears occasionally.
Transfer pears to serving dish, using a slotted spoon.
Strain syrup, reserving 1cup for use in Raspberry Sauce.
Serve pears on ice cream, if desired.
