Ingredients

 
5 to 6 apples
 
1/2 cup (125 mL) brown sugar
 
1/2 cup (125 mL) water or apple juice
 
Grated rind and juice of 1/2 a lemon or orange
 
2 tbsp (30 mL) jam of your choice
 
2 tbsp (30 mL) sherry (optional)

Directions

Peel the apples and cut them into quarters.
Place in a microwave-safe bowl the brown sugar, water or apple juice, the lemon or orange grated rind and juice.
Microwave at HIGH 3 minutes.
Stir well.
Add the apples, stir.
Microwave at HIGH 5 to 7 minutes, stirring once during the cooking period.
Remove the apples to a serving dish with a slotted spoon, draining as much syrup as possible.
Add the remaining ingredients to the syrup.
Stir.
Microwave at HIGH 1 minute.
Pour over the apples.
Cool, cover and refrigerate until ready to serve.
