Ingredients

 Water1 Quart
 1/3 cup cider vinegar or 1 cup white wine
 Carrot1
 1 onion, stuck with 2 cloves
 1 parsley sprig
 Stalk celery1
 Salt1 Tablespoon
 Lemon slices2
 1 whole striped bass

Directions

Place all ingredients except fish in a large flat pan; bring to boil and cook for 10 minutes.
Wrap fish in cheesecloth, lower into liquid, and simmer, covered, for 16 to 20 minutes.
