Ingredients

 1 1/4 cups Chablis or other dry white wine
 Water 1 Cup (16 tbs)
 Lemon1 , sliced
 Parsley sprig6
 Salt1/2 Teaspoon
 Peppercorns4
 Bay leaves2
 1 (1 1/2-pound) red snapper, dressed and with head intact

Directions

In a fish poacher or large skillet combine Chablis, water, lemon slices, parsley, salt, peppercorns and bay leaves.
Bring to a boil over medium-high heat.
Add snapper.
Cover; reduce heat.
Simmer for 20 minutes or until fish flakes easily.
To a serving plate remove snapper carefully.
Garnish with additional lemon slices.
