Poached Snapper Recipe
Ingredients
| 1 1/4 cups Chablis or other dry white wine | ||
| Water | 1 Cup (16 tbs) | |
| Lemon | 1 , sliced | |
| Parsley sprig | 6 | |
| Salt | 1/2 Teaspoon | |
| Peppercorns | 4 | |
| Bay leaves | 2 | |
| 1 (1 1/2-pound) red snapper, dressed and with head intact | ||
Directions
In a fish poacher or large skillet combine Chablis, water, lemon slices, parsley, salt, peppercorns and bay leaves.
Bring to a boil over medium-high heat.
Add snapper.
Cover; reduce heat.
Simmer for 20 minutes or until fish flakes easily.
To a serving plate remove snapper carefully.
Garnish with additional lemon slices.
