Ingredients

 Butter2 Tablespoon
 Onion1/3 Cup (16 tbs), chopped
 Carrot1/3 Cup (16 tbs), chopped
 Celery1/3 Cup (16 tbs), chopped
 Water1 Quart
 1/2 cup dry white wine, or 1/4 cup vinegar
 Salt To Taste
 Peppercorns1 To taste
 Salmon1 Pound
 Hollandaise sauce or mayonnaise

Directions

1. In a large skillet heat the butter, add the vegetables and cook five minutes. Add the water, wine and seasonings and simmer five minutes.
2. Wrap the salmon in cheesecloth and place in the boiling liquid. Lower the heat, cover and simmer gently about twenty-five minutes, or eight minutes per pound.
3. Remove the salmon carefully, unwrap
