Poached Red Snapper Recipe
Poached red snapper is a flavorful poached fish recipe. Cooked in wine and italian dressing mix along with vegetables like shallots and carrots, the snapper is flavored with a hint of lemon juice. Simmered till done, the red snapper is served with wine cooked spinach along with the vegetables arranged around it for an elegant platter.
Ingredients
2 quarts water
1 cup (8 ounces) Italian Dressing
1 cup dry white wine
2 medium carrots, finely chopped
1/2 cup chopped shallots or onions
1 tablespoon lemon juice
1 teaspoon grated lemon peel (optional)
3 whole cloves
1 teaspoon salt
1/4 teaspoon pepper
1 pound new or all-purpose potatoes, cut into large chunks
1 whole red snapper
1 pound fresh spinach leaves, stems trimmed
Directions
Place 13x9x2 1/2-inch baking pan on 2 stove burners; fill with water, Italian dressing, wine, carrots, shallots, lemon juice, lemon peel, cloves, salt and pepper.
Bring to a boil, then simmer uncovered 5 minutes.
Add potatoes and simmer, stirring occasionally, 20 minutes.
Add snapper and simmer, basting occasionally, 25 minutes or until fish flakes and potatoes are tender.
Carefully remove snapper and potatoes to serving platter and keep warm.
Add spinach to cooking liquid and simmer 30 seconds; drain.
To serve, arrange potatoes and spinach around snapper.
