Poached Halibut Recipe

Ingredients

 
1/4 cup white wine
 
1 1/2 cups fish stock or water
 
1/2 bay leaf
 
1 stalk celery, chopped
 
1 medium onion, chopped
 
4 each peppercorns
 
6 oz. halibut for each serving
 
3 oz. spinach, chopped
 
1/16 tsp. garlic
 
1 Tbsp. butter
 
1 tsp. almonds, finely chopped

Directions

Combine first six ingredients in saucepan and simmer to reduce liquid and blend flavors.
Poach halibut in liquid 8-10 minutes or until fish flakes easily.
Meanwhile, saute spinach with garlic and butter.
Keep warm until ready
