Poached Fish Fillets With Soy Dressing Recipe
Ingredients
| Soy sauce | 2 Tablespoon (Sauce) | |
| 1 tablespoon Shao Hsing wine or dry sherry | ||
| Sesame oil | 2 Teaspoon (Sauce) | |
| 4 thin slices fresh ginger | ||
| 2 green onions (including tops), cut in half | ||
| 1 pound firm white fish fillets, such as cod, halibut, or sea bass, 1/2- to 3/4-inch thick | ||
Directions
Preparation Place sauce ingredients in a small saucepan.
Whisk until blended and set aside.
Cooking Pour water into a wide frying pan to a depth of 2 inches.
Add ginger and green onions and bring to a boil.
Reduce heat so water barely simmers.
Add fish, cover, and simmer for 5 minutes or until center of fish is opaque.
Lift out fish with a slotted spatula, drain briefly, and place on a serving platter.
Bring sauce ingredients to a boil.
Drizzle sauce over fish.
