Poached Egg Consomme Or Broth Recipe
Ingredients
6 cups Beef or Chicken
Consomme or broth
6 whole eggs
Finely minced fresh chives, parsley or chervil
Toast or croutons
Directions
Bring consomme to boil and adjust seasonings.
Break an egg into 6 heated bowls and pour hot soup over to poach lightly.
Garnish with chives, and serve with toast.
