Directions
In a medium saucepan, combine the sugar, water, and vanilla bean and lemon juice.
Bring to a boil, and pour over the dried fruit.
Let the fruit set for 20 to 30 minutes, or until the fruit is plump and tender.
Serve at once, or cover and store in the refrigerator for up to 3 days.
Store the fruit in the syrup until you are ready to serve it.
If refrigerated, let sit at room temperature for 30 minutes before serving.
To serve, remove the fruit from the syrup with a slotted spoon.
