Poached Chicken With Vegetables Recipe
Ingredients
| 4 skinless boneless chicken breast halves | ||
| Salt | 1/2 Teaspoon | |
| Dried marjoram | 1 1/2 Teaspoon, chopped | |
| 1 medium carrot, coarsely shredded | ||
| Leek | 1 Medium, thinly sliced | |
| Zucchini | 1 Medium, cut into thin strips | |
| Butter margarine | 2 Tablespoon, melted | |
| 2 tablespoons dry white wine or chicken broth | ||
| 4 thin lemon slices | ||
Directions
Arrange chicken with thickest parts to outside edges in square microwavable dish, 8x8x2 inches.
Sprinkle with salt and half of the marjoram.
Place vegetables over chicken.
Drizzle with margarine and wine.
Sprinkle with remaining marjoram.
Top each with lemon slice.
Cover with plastic wrap, folding back one corner.
Microwave on high 10 to 12 minutes, rotating dish 1/2 turn after 5 minutes, until juices of chicken run clear and vegetables are crisp-tender
