Po' Boys Recipe

Po boys are seafood sandwiches. This po boy sanwich recipe is made with shucked oysters and mayonnaise along with hot pepper sauce. A cooked sanwich, these po boys are filling and can be filled with diced veggies of your choice too.

Ingredients

 
1 pint shucked oysters
 
2 eggs
 
1 cup corn flour or all-purpose flour
 
1/2 teaspoon salt
 
1/4 teaspoon pepper
 
Cooking oil or shortening for deep fat frying
 
2 7 inch long loaves
 
French bread, sliced horizontally
 
2 tablespoons butter or margarine, softened
 
Mayonnaise or salad dressing
 
Bottled hot pepper sauce
 
Lemon wedges

Directions

Drain the oysters; pat dry with paper towels.
In a small mixing bowl beat the eggs.
In another mixing bowl combine the flour, salt, and pepper.
Dip the oysters into the beaten eggs; coat with flour mixture.
In a saucepan or deep fat fryer heat about 2 inches of oil to 365°.
Fry oysters, a few at a time, in the hot oil for 2 to 3 minutes or till golden.
Drain the fried oysters on paper towels.
Keep warm in a 325° oven while frying the remaining oysters.
Meanwhile, spread the cut side of each roll bottom with the butter or margarine.
Heat rolls in a 325° oven about 5 minutes or till warm.
Spread the cut side of each roll top with mayonnaise.
Heap the fried oysters onto the bottoms of the rolls.
Sprinkle oysters with hot pepper sauce; add the tops of rolls.
