Ingredients

 - Plum Syrup -
 Plums500 Gram
 Rock sugar500 Gram
 Vinegar50 Milliliter
 - Plum Wine -
 Rock sugar250 Gram
 900ml Shochu (3.80 u.s. cup)
 (35% alcohol by volume)
 Shochu for Sanitizing Containers

Directions

1. Wipe prewashed dried container with shochu. Damp kitchen paper with shochu and wipe inside of the container thoroughly.
2. This sanitizing process is important to allow plum to age properly.
3. Also wipe the inner lid and outer lid.
4. Transfer prewashed plumps into two different bowls.
5. Soak the plums in enough water for 2 hours to remove bitterness.
6. Drain the plums and make sure not to make any damage on the plum skins.
7. Dry the plums thoroughly with clean cloth and kitchen paper.
8. Remove the stem end of the plum with a bamboo skewer.
PLUM SYRUP DIRECTION
1. Add plums to a sanitizer container.
2. Add rock sugar.
3. Add green plums again.
4. Add rock sugar.
5. Finally add vinegar to prevent the plum from fermentation.
6. Seal the container with the inner lid and outer lid.
7. For the first day, shake the container frequently to mix the sugar, plum and vinegar thoroughly.
8. Shake several times a day until all the rock sugar dissolves.
9. After 3 weeks all the plum juice is extracted.
10. Mix 1/5 part syrup and 4/5 part carbonated water or syrup for drinking.

PLUM WINE
1. Add plums to a sanitizer container.
2. Add rock sugar.
3. Add green plums again.
4. Add rock sugar.
5. Then add shochu to cover the sugar and plums completely.
6. Close the container with the lid.
7. Place the container in a cool and dark place.
8. Place a sticker on the bottle and mark the date.
9. It will take 6 months for the plum wine to become drinkable.
10. Shake the bottle occasionally to mix the sugar and the plum.
11. Keeping it for 1-2 years make the wine flavorful.
12. Plum wine can be mixed with ice, carbonated water or hot water for drinking.
