Ingredients

 Flour10 Ounce
 7 oz. butter or 5 oz. margarine
 1 oz. castor sugar
 Sour cream1 Teaspoon
 Yolks of 2 eggs, a little salt
 1 3/4 lb. stoned plums
 2 oz. castor sugar
 Bread crumbs1 Ounce (Filling:)
 Yolks of 3 eggs
 3 oz. castor sugar
 1 gill sour cream
 Flour2 Ounce (Top:)

Directions

Mix the flour, fat, 1 oz. castor sugar, yolks of two eggs and 1 tbsp. sour cream to a stiffish paste.
Let it stand for a while, then roll out and line bottom of baking tin with it.
Prick with a fork.
Spread halved plums evenly over it.
Sprinkle top of fruit with 2 oz. castor sugar and 1 oz. bread crumbs.
Prepare layer as follows: Beat well 3 yolks of eggs, 1 gill sour cream and 2 oz. flour.
Beat whites of 5 eggs with 1 oz. sugar, and when stiff, fold into yolk mixture.
Cover the layer of plums with it and bake in a moderate oven.
