Plum Soup Recipe
Ingredients
| 1-1/2 cups chopped ripe plums | ||
| Rusks | 1/4 Cup (16 tbs), crumbled | |
| 1/2 cup each dry white wine and apple juice | ||
| Small pinch each ground cinnamon, cloves and ginger | ||
| Heavy cream | 2 Tablespoon | |
| Sugar | 1 Teaspoon | |
| Lemon juice | 1/2 Teaspoon | |
| 1/4 cup Rhine wine | ||
| Unpeeled apple slices, rubbed with fresh lemon juice | ||
Directions
Cook plums, rusk crumbs, wine, apple juice and spices until plums are soft.
Sieve.
Add cream, sugar, lemon juice and wine.
Chill and adjust seasonings to taste, adding more chilled wine if desired.
Garnish with apple slices.
