In water, soak prunes 3-4 hours.
Preheat oven to 400 °F (205 °C).
Butter and sugar a souffle dish.
Set aside.
Drain prunes.
Pour into a bowl.
Mix in butter, flour, lemon peel and cinnamon.
Set aside.
In a second bowl, beat egg whites and salt until stiff peaks form.
Gently fold in previous mixture.
Pour into souffle dish.
Bake in oven 30 minutes.
