Plum Peach Coffee Cake Recipe

| 1 30- to 31-ounce can whole purple plums,drained | ||
| Butter/Margarine | 1 Cup (16 tbs), softened | |
| Sugar | 1 Cup (16 tbs) | |
| All purpose flour | 1 3/4 Cup (16 tbs) | |
| Baking powder | 2 Teaspoon | |
| Lemon peel | 2 Teaspoon, grated | |
| Salt | 1/4 Teaspoon | |
| Eggs | 4 standard | |
| 1 16-ounce can sliced cling peaches, drained | ||
Directions
1. Prepare Streusel Topping; set aside. Cut each plum in half; discard pit.
2. Preheat oven to 325°F. Grease and flour 13" by 9" baking dish. In large bowl, with mixer at medium speed, beat butter or margarine and sugar until light and fluffy. Reduce speed to low; add flour, baking powder, grated lemon peel, salt, and eggs; beat until blended, occasionally scraping bowl with rubber spatula. Increase speed to medium; beat mixture until smooth.
3. Spread batter evenly in baking dish; top with half of plums. Pinch Streusel Topping into small pieces; sprinkle on top of cake.
4. Bake 20 minutes. Quickly top cake with peaches and remaining plums; bake 30 to 35 minutes longer until toothpick inserted in center comes out clean.
