Plum Good Pork Recipe
Ingredients
| 1 pound boneless pork loin, cut into thin stir-fry strips | ||
| Vegetable oil | 2 Teaspoon, divided | |
| Ginger | 1 Tablespoon, grated | |
| 1/2 red bell pepper, cut into 1-inch squares | ||
| 1/2 green bell pepper, cut into 1-inch squares | ||
| Mushrooms | 1 Cup (16 tbs), sliced | |
| Plums | 6 | |
| 1 cup peach nectar | ||
| Lime juice | 1/3 Cup (16 tbs) | |
| Cornstarch | 1 Tablespoon | |
| Soy sauce | 2 Tablespoon | |
| Ground cinnamon | 1/4 Teaspoon | |
| Dry mustard | 1/2 Teaspoon | |
| 1 teaspoon grated fresh orange peel | ||
Directions
Heat 1 teaspoon oil over high heat in nonstick skillet; stir-fry pork strips with ginger about 3 minutes.
Remove from skillet.
Heat remaining 1 teaspoon oil in skillet; stir-fry peppers and mushrooms 3 minutes.
Add plums and stir-fry 2 minutes.
Combine remaining ingredients well; add to skillet with pork.
Cook and stir until sauce bubbles and thickens.
Remove from skillet.
