Ingredients

 Dark plums - 4 (about 3/4 pound), peeled, pitted and cut into 1-inch pieces
 Ginger1 Tablespoon, finley grated
 Garlic1 Clove (5gm)
 Hoisin sauce 3 tablespoons
 Firmly packed brown sugar2 Tablespoon
 Soy sauce2 Tablespoon
 Cider vinegar1 Tablespoon
 Chives4 Tablespoon, chopped

Directions

MAKING
1 In a saucepan, add all the ingredients except vinegar and chives.
2 Gently simmer the mixture.
3 Cover and cook stirring occasionally until the plums fall apart, about 20 minutes.
4 Stir in vinegar and simmer uncovered stirring regularly.
5 Cook until the sauce reaches the consistancy of ketchup, about 10 minutes.
6 Add in chives.

SERVING
7 Serve as desired.
