2 cups red wine
 
1/2 cup wine vinegar
 
1 tbsp oil
 
2 carrots, sliced into rounds
 
1 onion, chopped
 
1 garlic clove, chopped
 
Herb bouquet
 
Salt and pepper
 
3 lbs beef cubes
 
2 tbsp butter
 
1 cup beef broth
 
8 oz dried prunes
 
Lukewarm water

Directions

In a large salad bowl, combine first 8 ingredients.
Add beef cubes, mixing well.
Marinate in refrigerator 12 hours.
Remove beef cubes from refrigerator.
Drain well, reserving marinade.
In a skillet, melt butter.
Lightly cook beef cubes.
Pour in broth and marinade.
Cover.
Over low heat, cook 2 1/2 hours.
Meanwhile, cover prunes with lukewarm water.
Let soak.
Approximately 15 minutes before the end of cooking, add prunes to beef casserole.
On a serving dish, arrange beef cubes in a ring of prunes.
