Plov or Pilaf Recipe Video

This very simple traditional dish, if done right, will fill your house with unbearably good smells of lamb, rice, and everything in between! Take time to make it and you will dive head first into the most precious delicacies of the Middle East.

Recipe Story

Cooking plov is is the second oldest tradition running in my family.

Ingredients

 
Lamb 2-3 lbs
 
Rice 2 cups
 
Onion 1
 
Carrots 2-3
 
Salt, pepper, spices… you name it

Directions

1. Wash the rice and let it settle in bath-warm water.
2. Cut up the lamb and trim the fat. Start frying it in the dutch pot.
3. Cut up the onions, add to the pot. Stir.
4. Cut up the carrots, add to the pot. Stir.
5. Add 3 cups of water to the pot. Make it boil.
6. Add 2 cups of rice. Even it out to conceal it completely underneath the water. But do NOT stir.
7. Thus water:rice ratio is 3:2.
8. Boil out the water for 10 minutes.
9. OPTIONALLY top the rice with spices.
10. Lower the flame, cover the pot with a lid and cook for 20 minutes.

In the end

Every grain of rice should be cooked through but whole, solid and completely surrounded by aromas of lamb and vegetables.

This Plov looks very delicious ! Plov is a traditional favorite even in India. But here, the basic word refers to vegetable and rice with spices.
