4 cups cooked and drained black-eyed peas
 
2 cups cooked and drained rotini pasta
 
1 medium-size red bell pepper, chopped
 
1 medium-size green bell pepper, chopped
 
1 medium-size purple onion, chopped
 
2 tablespoons chopped parsley
 
4 slices Provolone cheese, chopped
 
4 slices pepperoni or salami, chopped
 
1 jar (2 ounces) pimiento
 
1 jar (4 1/2 ounces) whole mushrooms, drained
 
2 tablespoons dry Italian salad dressing mix
 
1/2 teaspoon salt
 
1/4 teaspoon black pepper
 
1/2 cup wine vinegar
 
1/4 cup sugar
 
1/4 cup vegetable oil

Directions

Combine black-eyed peas, pasta, peppers, purple onion, parsley, Provolone cheese, pepperoni, pimiento and mushrooms in large bowl; set aside.
Combine salad dressing mix, salt and pepper in small bowl.
Add vinegar and sugar; mix well.
Stir in oil.
Add to black-eyed pea mixture; toss lightly until well combined.
Cover; refrigerate at least 2 hours before serving.
Garnish as desired.
