Planter'S Punch Syllabub Recipe
|Dark rum||3 Tablespoon (2 -3 Generous Tablespoons)|
|Caster sugar||2 Teaspoon (Or To Taste)|
|Fresh lime juice/Lemon / orange juice||2 Tablespoon|
|Grated lime rind/Freshly grated lemon / orange rind||1 Teaspoon, grated freshly|
|Ripe mangoes/Any other tropical fruits||2|
|Double cream||1⁄4 Pint, chilled (150 Milliliter)|
|Freshly grated nutmeg||1 Pinch|

An hour or so before the meal, slice the mangoes and place in the bottom of attractive glasses.
Sprinkle them with the extra rum and juice.
Pour the cream into the rum mixture and whip until it holds its shape but is still rather soft and floppy.
Ensure that you scrape back any pieces of the rind which may be clinging to the whisk or beaters.
Spoon the syllabub over the fruit and put the glasses to chill until needed.
Just before serving, grate on some nutmeg.
I sometimes serve these with unfilled ginger crisps.
