Plantation Corn Cakes Recipe

Ingredients
1 cup yellow cornmeal
1/2 cup all-purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon sugar
1 1/2 cups buttermilk
1 egg, lightly beaten
2 tablespoons melted bacon drippings, cooled; or 2 tablespoons melted butter, cooled
Directions
Preheat oven to 425 degrees.
Grease a shallow baking pan, approximately 9 x 12 inches.
Shortly before pouring in the batter, place the empty pan in the oven to heat through.
Sift together all dry ingredients.
Beat in the buttermilk, egg, and melted bacon drippings.
Pour corncake batter into the hot pan and bake 15 to 20 minutes, until dry to the touch.
