Ingredients

 Frozen Flounder Fillets - 2 packets, thawed
 Butter/Margarine1/4 Cup (16 tbs)
 Lemon juice2 Tablespoon
 Paprika1/2 Teaspoon
 Duchess Potatoes - as required
 Frozen Mixed Vegetables - 1 packet, cooked, drained, seasoned
 Buttery Cherry Tomatoes
 Watercress - for garnish

Directions

GETTING READY
1) Preheat the oven to 400°F.
2) Separate the fishes in a single layer on a cookie sheet.

MAKING
3) In a small saucepan, melt butter or margarine. Add in lemon juice and paprika. Mix well and brush a little of the mixture over the fish.
4) Broil the fish fillets about 4 inches from the heat source for 5 minutes.
5) Transfer the fish from the cookie sheet to a seasoned 15X10-inch plank or a heatproof platter.
6) Into a pastry bad, add in the Duchess Potatoes. Pipe 6 nests of potatoes around the plank or platter.
7) Arrange the remaining potatoes on the border between the nests.
8) Brush the reserved paprika-butter over the fish.
9) Bake for about 15 minutes until the poatoes turn golden brown.

SERVING
10) Fill in the potato nests with the seasoned vegetables mixture.
11) Grnish the plank or platter with Buttery Cherry Tomatoes and watercress.
