Ingredients

 Eggs15 Small
 Salt1 Teaspoon
 Cream1/10 Pint
 2 oz. lard or 2 1/2 oz. butter

Directions

Break eggs into a deep bowl, add cream, salt and beat well with a fork.
Put lard or butter in a frying pan over an open flame.
When hot, pour beaten eggs into it.
Mix and shake well, until it thickens, then roll up with a fork, fry for one more second to brown, and turn out.
Take care to keep the omelette's middle soft, because it may be properly shaped only while soft.
