Plain Linzer Biscuits Recipe
Ingredients
| Flour | 1 1/2 Pound | |
| Butter | 7 Ounce | |
| Lard | 5 Ounce | |
| Sugar | 7 Ounce | |
| Eggs | 2 | |
| Hazelnuts | 2 Ounce | |
| Pinch of cinnamon | ||
| Half a tsp. bicarbonate of soda | ||
| Grated rind of half a lemon | ||
Directions
Weigh and put on the pastry board the flour, butter and lard.
Rub well together, add the sugar, ground hazelnuts, 2 whole eggs, bicarbonate of soda, grated lemon rind and a pinch of cinnamon.
Knead together lightly, form into a loaf and keep in a cold place for one hour.
Roll out to pencil thickness; stamp out with different biscuit cutters to various shapes.
Put biscuits on a baking sheet, brush tops with beaten egg, sprinkle with coarsely chopped almonds, and bake in a moderate oven till biscuits are of a light golden colour.
Ground walnuts or almonds may be used instead of hazelnuts.
