 Eggs4 standard
 Cold water1 1/2 Tablespoon
 Salt To Taste
 Black pepper1 To taste
 Butter2 Tablespoon
 7—8 inch omelet pan

Directions

Break eggs into a bowl and beat well with a fork.
When yolks and whites are broken up, add water and seasoning (this should be done just before cooking).
Heat pan on medium heat, add butter in two pieces and, as soon as it is foaming, pour in egg mixture.
Leave 10-15 seconds before stirring around slowly with the flat of a fork.
Stir once or twice around pan, then cook for another 5-6 seconds.
Lift up the edge of omelet to let any remaining raw egg run onto the hot pan.
Tilt the pan away from you and fold the omelet over to far side.
Change your grip on the pan so that the handle runs up the palm of your hand.
Take a warmed dish or plate in your other hand, tilt it slightly and tip omelet onto it.
