Ingredients
300 g (10 oz) plaice fillet
15 g (1/2 oz) butter
1 banana, sliced
25 g (1 oz) peanuts
25 g (1 oz) Cheddar cheese, grated sauce
15 g (1/2 oz) butter
2 tablespoons plain flour
150 ml 1/4 pint) milk
2 tablespoons natural low-fat yogurt
Salt and pepper to garnish
Parsley sprigs
Directions
Place the fish in a greased shallow ovenproof dish.
Dot with the butter and cook in a preheated moderate oven, 180°C (350°F), Gas Mark 4, for 10 minutes.
Remove from the oven and arrange the banana and nuts over the fish.
To make the sauce: Melt the butter in a saucepan and stir in the flour.
Cook for 1 minute, then gradually blend in the milk.
Heat, stirring until the sauce thickens.
Stir in the yogurt, with salt and pepper to taste.
Pour the sauce over the fish, sprinkle with the cheese and return to the oven for 15 minutes.
Garnish with parsley.
