Pizza With Black Bean Salsa Recipe
The pizza with black bean salsa is a cooked flour tortilla pizza recipe. Baked with a topping of black bean salsa made of red peppers, tomatoes, chilies, corn and cilantro, the pizza with black bean salsa is sprinkled with cheese before serving and makes for a easy and delicious meal.
Ingredients
6 10-inch/25 cm flour tortillas 6
1 cup cooked black beans 250 mL
2 sweet red peppers, roasted, peeled and diced 2
2 tomatoes, seeded and diced 2
1 cup fresh or frozen corn niblets 250 mL
1 chipotle or jalapefio
finely chopped
1/2 cup chopped fresh cilantro or parsley 125 mL
1 1/2 cups grated Monterey Jack or smoked 375 mL mozzarella cheese (5 oz/150 g)
Directions
Prick tortillas all over with fork.
Place directly on oven rack in preheated 400°F/200°C oven for 5 minutes, or until lightly browned and crisp.
Arrange tortillas in single layer on three baking sheets.
In bowl, combine beans, red peppers, tomatoes, corn, chipotle and cilantro.
Spoon about 3/4 cup/175 mL black bean mixture on each tortilla.
Sprinkle each with 1/4 cup/50 mL cheese.
Return to oven and bake for 7 minutes, or until cheese has melted.
Serve whole or cut into wedges.
