Pizza Salad With Roasted Garlic Hummos Recipe

The pizza salad is a delicious and tangy salad mix that can be served as a side or over bread as a meal. Prepared with a spread of hummus over bread, the pizza salad is spooned over it and served. The salad is a made with a fresh mix of spinach, tomatoes, basil and flavored with garlic.

Ingredients

 
1 10-inch/25 cm focaccia 1
 
2 tbsp olive oil 25 mL
 
1 clove garlic, minced 1
 
1/4 tsp salt 1 mL
 
1/4 tsp pepper l mL
 
Roasted Garlic Hummos:
 
1 19-oz/540 mL tin chickpeas, drained and rinsed 1
 
1 head roasted garlic, or 2 cloves minced raw garlic 1
 
2 tbsp lemon juice 25 mL
 
1 tsp ground cumin 5 mL
 
1 tsp sesame oil Salt and pepper to taste 5 mL
 
Salad:
 
1 lb fresh spinach, coarsely chopped 500 g
 
1 lb fresh tomatoes, seeded and diced 500 g
 
1/2 cup shredded fresh basil, optional 125 mL
 
3 tbsp balsamic vinegar 45 mL
 
1/2 tsp salt 2 mL
 
1/2 tsp pepper 2 mL
 
1 clove garlic, minced 1
 
2 tbsp olive oil 25 mL

Directions

Slice focaccia in half horizontally.
In small bowl, combine olive oil with garlic.
Brush over cut surfaces of bread.
Sprinkle with salt and pepper.
Bake in preheated 400°F/200°C oven for 10 minutes, or until warm and crusty.
Meanwhile, to prepare hummos, place chickpeas in food processor or blender.
Squeeze garlic out of skins and add.
Blend.
Add lemon juice, cumin and sesame oil and blend in.
Taste and season with salt and pepper.
Spread hummos over cut surfaces of toasted bread (add a little water if mixture is too thick to spread).
Meanwhile, in large bowl, combine spinach, tomatoes and basil.
In small bowl, combine vinegar, salt, pepper and garlic.
Whisk in oil.
Toss well with salad.
Spoon salad over top of bread.
Cut each round into quarters to serve.
