Recipe Story

We wanted to build a better Turkey. One that could be put in the oven, basted a time or two but pretty much, left on it's own to cook itself! Go out to the grocery store where the cheap utensils are. Most stores will have the injectors for between $1.50 - $3.00.

Ingredients

 
For the Rub:
 
1/2 cup olive oil
 
1 spice cap full Black Pepper
 
1 Spice cap full ground Sage
 
2 Tbs Salt (more or less for your taste) We tend to take it easy on salt
 
1 Spice cap 1/2-Full Cayenne Pepper
 
1 Turkey 10-15Lbs
 
1 Bottle Pizza Beer

Directions

Clean Turkey, remove all giblets inside & wash off real good
Place Turkey in a Roasting Pan
THE NIGHT BEFORE YOU COOK THE BIRD:

Add to 1/2 Cup Olive Oil, all of the dry ingredients and mix
Pour the contents of the "rub" onto the Turkey & rub it all over top to bottom & in all the cracks
Wash Hands
Pour 1 Bottle Of Mamma Mia Pizza Beer into a bowl or cup
Use injector to suck up the beer & inject it into several spots in the turkey. (Tip: Lightly oil the sides of the rubber stopper on the injector before using, it'll help it slide in & out much easier. Too much oil & you won't suck up anything.. Just a bit)
Cover with foil, refrigerate overnight

Preheat Oven to 325 degrees Fahrenheit, put Turkey in
From time to time, baste the bird on the top & shoot some inside cavity
Should take about 4 hours for a 13 pounder, check with meat thermometer @ 170 degrees Fahrenheit
Remove turkey & cover, feel free to pick off some skin.
Let rest covered for about 15 minutes or until you just cant wait to dig in!

You may use the pizza beer drippings for terrific gravy. Add one more bottle of Mamma Mia into the gravy mix for a real taste treat!
