Pizza Sandwiches Recipe

Ingredients

 
1 teaspoon olive oil
 
1 small yellow onion, chopped fine
 
1 clove garlic, minced
 
1/2 cup low sodium tomato sauce
 
1/2 teaspoon each dried oregano and basil, crumbled
 
1/4 teaspoon dried thyme, crumbled
 
4 English muffins
 
3/4 cup shredded part skim mozzarella cheese
 
1/4 cup grated Parmesan cheese

Directions

Preheat the broiler.
In a small heavy saucepan, heat the olive oil over moderately low heat for 1 minute; add the onion and garlic and cook, uncovered, for 2 to 3 minutes.
Stir in the tomato sauce, oregano, basil, and thyme; cook, stirring occasionally, for 2 minutes.
Meanwhile, split and toast the muffins.
Sprinkle the 8 toasted muffin halves with half the mozzarella cheese, dividing it evenly.
Place the muffins on the broiler pan and broil, 3 to 4 inches from the heat, for 1 to 2 minutes or just until the cheese has melted.
Spread 1 tablespoon of the tomato mixture on each of the muffin halves, then sprinkle with the remaining mozzarella and the Parmesan cheese.
Return the muffins to the broiler and broil 3 to 4 inches from the heat for 1 to 2 minutes or until the cheese melts.
Sandwich the muffin halves together, forming 4 pizza sandwiches.
Cool to room temperature, wrap in plastic wrap or aluminum foil, and refrigerate until ready to pack.
