Pizza On A Potato Crust Recipe
This lovely pizza on a potato crust recipe is actually a wonderful recipe for making a pizza with a mashed potato base. Prepared with beef and vegetables as topping along with cheese, the pizza on a potato crust is spicy and saucy. Try it once and you will try it again!
Ingredients
1 2 oz. mushrooms, chopped can
4 cup mashed potatoes
2 egg whites, slightly beaten
1 tsp. Italian seasoning
1 cup soft whole wheat bread crumbs
1 cup Tomato Sauce
4 oz. lean ground beef, browned
1 tomato, sliced
1/4 cup onion, chopped
1/4 cup green pepper, chopped
1/4 cup celery, chopped
1/2 cup pineapple chunks, optional
1/2 cup mozzarella cheese, grated
Directions
1. Drain mushrooms and reserve the liquid.
2. Combine mashed potatoes, reserved mushroom liquid, egg whites, Italian seasoning, and bread crumbs.
3. Pat potato mixture into a nonstick casserole. Spread tomato sauce evenly over potato mixture. Sprinkle ground beef over top.
4. Sprinkle remaining ingredients, except cheese, evenly over sauce, beginning with tomato slices.
5. Bake at 350° for 45 minutes. Top with cheese and return to oven until cheese melts, about 5 minutes.
